(KMOV)-- Chocolate is given modern, sophisticated treatment at Kakao, which just opened up a new storefront on Jefferson. Chocolatier Brian Pelletier uses only the best ingredients to make his confections and everything is made by hand.
But before Brian creates his luscious nibbles, he starts with the highest quality chocolates, and not just one kind.
Brian will give us a chocolate 101. He sources from four places and uses I think eight kinds of chocolate.
Truffles are the centerpiece of Kakao's selection of treats, and Brian works with unique flavors ranging from lavender to ginger to earl gray tea to hot chiles.
The flavors may seem unusual, but they pair perfectly with the nuances of very high quality chocolate.
Brian gives each confection a creative spin. His take on the chocolate covered strawberry starts with his strawberry pate de fuille, a jelly-like candy, which is then topped with ganache and then dark chocolate.
Other treats that are available include caramels with sea salt and a range of marshmallows. Some are flavored with fruit, like the mango marshmallow, but it's the marshmallow pie with Missouri pecans you have to try!
