Ally Nisbet, owner of the Shaved Duck, recently closed and then reopened his well regarded restaurant in order to introduce a new concept that was more in line with the economic times, and business is better than ever.

The Shaved Duck now serves classic Americana fare, and barbecue is at the top of the list.

Nisbet, along with Chef Kat Kobylarek, uses hickory and red oak to smoke his meats, which are given signature rubs.

And the sauces, they're served on the side in true Memphis style.

Another Shaved Duck specialty is flatbread. The crust is thin and crispy and the toppings are unexpected. Try the duck confit flatbread with caramelized onions and a horseradish cream.

And if you're looking for some spice, try their chili sampler. Four chilies stand up to each other, one spicier than the next.

Round out your meal at the Shaved Duck with a gooey butter brownie and you are in Americana heaven!
