8 oz cream cheese
8 oz Irish White Cheddar cheese
1/4 cup Irish Ale (Smithwicks or Kilkenny)
1/2 lb. large shrimp, cleaned and deviened
1 TBLS butter
1 TBLS garlic, minced
1 TBLS parsley, finely chopped
1 TBLS dill, finely chopped
1/2 TBLS thyme, finely chopped
1/4 cup green onion, chopped

In a large sauce pot, add cheeses and beer. Melt slowly on medium heat stirring occasionally. In a medium saute skillet, melt 1/2 TBLS butter on medium high heat. Add garlic and shrimp. Cook until shrimp is pink, about 4-5 minutes.

Add all herbs and green onion then immediately remove from heat. Chop shrimp into small bite size pieces. When cheese is melted add shrimp pieces, garlic, herbs and green onion to sauce pot.  Remove from heat.

Using the other 1/2 TBLS  butter, grease an oven proof casserole. Add the mixture and broil until golden brown and bubbly, about 3-4 minutes.

Serve with toast points, croistini, grilled bread or toasted pita chips.
