Peach and Mixed Greens Salad


Ingredients: 


1 small shallot, finely diced


3 tablespoons champagne vinegar


1 1/2 teaspoon honey, optional


1/2 cup extra-virgin olive oil


Salt and freshly ground pepper


2 peaches, peeled if desired


1/2 pound fresh salad greens


1/2 cup shaved Pecorino Romano cheese 


Directions:

In a large bowl, combine all ingredients. Whisk until emulsified.  Toss greens with sliced peaches and just enough vinaigrette to coat. Garnish with cheese.
       
Farmer’s Salad
Vinaigrette Ingredients:
2 tablespoons olive oil, extra virgin
2 tablespoons lemon juice
1 teaspoon Dijon mustard

Salad Ingredients:
4 cups Romaine lettuce
1/2 cup red bell pepper, thin sliced
1/2 cup carrot, thin sliced
1/2 cup cucumber, thin sliced
1/2 cup red onion, thin sliced
1/2 cup broccoli floret
1/2cup cherry tomato, quartered
4 tablespoons Goat cheese
            
Directions:

Whisk togehter vinaigrette; set aside. toss salad ingredients together; add vinaigrette just before serving. season with salt and fresh ground black pepper.  top salad with goat cheese.
