Blue Cheese and Fig Crostini

20 thin slices of baguette
2 tablespoons olive oil
salt
pepper
1/2 cup fig preserves
3oz blue cheese thinly sliced

Per-heat oven to 375
Place sliced baguette on baking sheet and brush or drizzle with oil
Sprinkle with salt and pepper
Place sliced baguette in oven at for 5 to 7 minutes or until lightly toasted
Top with preserves and cheese


Smoked Salmon Crostini

20 thin slices of baguette
2 tablespoons olive oil
salt
pepper
1/2 cup whipped cream cheese
2 tablespoons fresh dill chopped (reserved)
I teaspoon black caviar for garnish (if desired)
3oz smoked salmon

Per-heat oven to 375
Place sliced baguette on baking sheet and brush or drizzle with oil
Sprinkle with salt and pepper
Place sliced baguette in oven at for 5 to 7 minutes or until lightly toasted

Combine cream cheese and 1tablespoon of chopped dill
Roll small strips of salmon up and place on toasted baguette
Top with cream cheese mixture
Garnish with remaing dill and caviar


Roast Beef and Pomegranate Crostini

20 thin slices of baguette
2 tablespoons olive oil
salt
pepper
1/2 cup sour cream
2 tablespoons mayonnaise
2 tablespoons fresh horseradish
1/4 cup pomegranate seeds
2 green onions or chives chopped
1/4 pound thinly sliced high grade roast beef

Per heat oven to 375
Place sliced baguette on baking sheet and brush or drizzle with oil
Sprinkle with salt and pepper
Place sliced baguette in oven at for 5 to 7 minutes or until lightly toasted
Combine sour cream, mayonnaise and horseradish
Roll small strips of roast beef and place on toasted crostini
Top with sour cream mixture
Garnish with pomegranate seeds and chives
