Denver Deviled Eggs

Our take on the Denver Omelet for Super Bowl XLVIII

6 hard boiled eggs, cut in half*
2 TBL finely shredded sharp cheddar
1 TBL mayo
1 TBL sour cream
1 TBL spicy pickle relish
1 tsp Dijon
1 tsp chopped chives
¼ tsp smoked paprika
salt and pepper to taste
1 slice hickory smoked bacon, cooked, 1 TBL oil reserved

Remove yolks and place in bowl.  Add cheddar and next 7 ingredients.  Add 1 TBL bacon oil.  Place mix in piping bag and pipe into egg shells.  Cut bacon into small strips and place on egg to look like a football.  (Or just sprinkle over the top!)

*Perfect Hard Boiled Eggs
Place eggs in saucepan and fill with cold water, just covering eggs.  Bring to boil.  Once boiling, remove from heat and cover for 12 minutes.  Run eggs under cold water and peel immediately.

Seattle Smoked Salmon Dip

4 oz Smoked Salmon* (not lox), store bought is okay is if you do not have a smoker
½ cup Sour Cream
½ cup Softened Cream Cheese
4 tsp fresh horseradish
2 ½ tsp lemon juice
2 ½ tsp hot sauce
2 ½ tsp capers

Mix all ingredients except Smoked Salmon in a food processor.  Add chunks of salmon and pulse until blended.  Serve with crostini’s and cucumbers.

*The Social Affair smokes their own salmon.  You can purchase it from them with 48 hours notice.
