Recipe: Vegan Birthday Cake

Dry Ingredients
2 ½  C unbleached flour
1 C raw sugar
1 ½ tsp baking soda
1 tsp salt
 
Wet Ingredients
1 ¼ C cold water
1 ½ TBS apple cider vinegar
3 TBS canola oil
4 TBS unsweetened apple sauce
1 ½ tsp vanilla extract
 
1 C dairy-free chocolate chips, coarsely chopped
Fresh strawberries, sliced
 
Preheat oven to 350°.  Pour dry ingredients in one bowl and wet in another.  Mix dry ingredients together well and slowly mix in wet ingredients by hand.  Once thoroughly mixed, fold in the chocolate chips.   Pour batter in an oiled 9” round cake pan and bake for 35-40 minutes, or until you stick with a toothpick and it comes out clean.  Allow to cool, decorate and serve.

3/4 C vegan margarine (such as Earth Balance), softened
1 1/2 TBS vanilla extract
1/2 C unsweetened cocoa powder, divided
3/4 C confectioners sugar, divided
