2-tablespoon Extra virgin olive oil
8-skinless, boneless chicken thighs
Fresh friend pepper
1/2- onion, chopped
2- cloves garlic, minced
1/3- cup cilantro, finely chopped
1 - jalapeño, seeded, chopped
1- tablespoon sugar
1- teaspoon hot chili sauce (Sriracha)
1- lime, juice and grated lime rind
Heat a large skillet over medium-high heat. Coat pan with oil. Sprinkle chicken evenly with salt and pepper. Add chicken to pan; sauté 6 minutes or until browned. Turn; sauté 4 minutes or until chicken is done. Place chicken on a platter.
Combine pinch of salt, onion, jalapeño, sugar, hot chili sauce, and garlic in a food chopper.
Combine garlic mixture, lime juice, and grated lemon rind. Spread 1 tablespoon of the mixture over each chicken thigh.
