1 medium spaghetti squash, about 2 pounds, punctured
2-4 Tbsp butter
¾ cup grated parmesan cheese or gruyere cheese
2 Tbsp chopped chives
Salt and pepper to taste
Preheat oven to 375F. Bake the squash until the flesh is soft about 1 hour. Cut the squash in half and scrape out the seeds. Drag a fork through the flesh, pulling the strands apart. Toss them with butter, cheese and chives. Season with salt and pepper.
*You can also cook the squash in a microwave for 15-20 minutes or until soft.
It can be served with marinara sauce or any pasta sauce.
