Recipe: Herb Grilled Chicken with Zucchini Marinara Parmesan

Ingredients  for chicken

1-2 pounds chicken tenderloins or breasts, gluten free, not in solution

Healthy oil: 2 tbsp. grapeseed, coconut or olive oil

Seasoning: gluten free garlic herb rub, italian seasoning with added sea salt

½ lemon or lime


Put meat,  oil, seasoning, and juice of citrus fruit in a bpa free ziplock bag. Refrigerate to marinade over night or use immediately. This can also be put in the freezer as a meal for later use. 

To cook on grill pan: preheat on medium heat with the press on for 5 minutes, remove press, add chicken, put the press back on and time for 4 minutes, turn chicken, replace the press and cook another 4 minutes. DONE!

To microwave use a microwave safe stone or rockcrok, cook on a turntable microwave 8-10 minutes.

-For a one-pot meal feel free to add the zucchini recipe below to the same pot and finish as instructed. 

Ingredients for zucchini marinara

3 large or 6 small zucchini

1 cup or ½ jar marinara

Garlic cloves, 2-3

Parmesan cheese to top


Using a Julianne or serrated peeler,  turn the zucchini around as you julienne so not to use the seeds

Press 2 cloves of garlic to enhance flavor and health benefits

Top with 1 cup or 1/2 jar of high quality marinara or pasta sauce

Sprinkle with Italian seasoning, garlic herb rub, etc.

Cover and microwave for 5 minutes, top with freshly grated parmesan. If using the rock crock you can broil the cheese on top!!
