1 (17.3 oz) box of frozen Puff Pastry (2 sheets), thawed
1/2 - 3/4 cup granulated sugar
1/8 cup honey
You will also need: water, pastry brush, knife, flour, parchment paper, cookie sheet
Preheat oven at 375 degrees F. Sprinkle working surface with flour. Unfold pastry and roll into a 14in X 10in rectangle. Very lightly brush pastry with water with a pastry brush.
Sprinkle pastry with sugar. Fold long sides pastry inward so both sides meet in the center. Lightly brush with water and sprinkle more sugar lightly pressing down on the sugar.
Fold again both sides inward so the sides meet in the middle. Again, lightly brush with water and sprinkle more sugar. Fold each side in into each other and lay pastry on the side to cut. Cut pastry in 1/4 in slices and place on parchment paper lined cookie sheet.
The pastry will expand crosswise (sideways), so allow about 1 1/2 inches in between palmiers. They will not expand lengthwise, so you can place them one immediately below and above each other. Bake in preheated oven for 18-22 minutes or until golden and crunchy. The sugar will caramelize.
Remove from oven and brush very lightly with honey (corn syrup can also be used), decorate with the sprinkles. Store in an airtight container.
