Light and Airy Cheesecake
1 8oz cream cheese, softened
8 oz sour cream
1/2 cup sugar
1 t vanilla extract
3 eggs, separated
1/8 t cream of tartar
Vanilla wafer crumbs
1.Preheat oven at 350 degrees
2.Prepare 8 in springform pan by wrapping it in foil, spraying the interior with cooking spray and covering the bottom and sides with crushed vanilla wafers.
3.Cream egg yolks and sugar. Add cream cheese, then sour cream and vanilla.
4.In a separate bowl, beat egg whites until foamy, add cream of tartar then beat egg whites stiff and fold into the cream cheese batter.
5.Pour batter into prepared pan. Place springform pan in bain marie and bake for 50 minutes.
6.Turn off the oven and let cheesecake cool down inside the oven for one hour with the oven door closed.
7.Refrigerate and eat cold with a drizzle of your favorite fruit syrup or topping.
