Whipped Strawberries

10 ounces fresh strawberries, stemmed and frozen
5 ounces confectioners’ sugar
2 egg whites
2 teaspoons lemon juice

Place the frozen strawberries and confectioners’ sugar in a blender and pulse until well chopped. Scrape down the sides and add the egg whites and lemon juice. Puree on high for two minutes or until the mixture is smooth and frothy. Place in the fridge until ready to use. Can be made up to three hours ahead of time.

Champagne Raspberry Gelatin

12 cups sparkling rosé wine
2 cups sugar
8 envelopes unflavored gelatin

Place half the sparkling wine and all of the sugar in a medium pan and simmer, stirring to dissolve sugar. Remove from heat and let cool. Mix remaining sparkling wine and gelatin in large bowl. Let stand until softened. Combine the two wine mixtures and stir to combine. Divide the mixture evenly among individual bowls. Cover with plastic; refrigerate until firm, at least 4 hours and up to 2 days. Top with whipped strawberries and serve.
