Cajun Jambalaya with Shrimp

1 Tbsp- Diced Andouille Sausage
2 Tbsp of Mirepoix ( diced onion, pepper, and celery)
3/4 Brown Rice
4 oz Vegetable Demi-Gace'( 1/3 reduced Vegetable Stock for flavor fortification)
3 oz shrimp
1/4 cup tomatoes diced
1/4 cup corn 1 Tsp Tabasco sauce( for Heat)
1 Tbsp Sliced green Onion

Heat pan over medium high heat, spray with olive oil
Add 1 Tbsp of Andoullie Sausage and 1/4 CupTrinity Vegetables to the pan
Add 1 Cup of Cooked Brown Rice
Add 2 oz of Vegetable Demi, and bring to a simmer
Add 1/4 cup of cooked shrimp, chicken or tofu, and heat to 165.
Add 1/4 Cup of Corn and 1/4 Cup of Diced Tomatoes
Place into serving plate, garnish with 1Tbsp green onion
Place the hot dish into a bowl and serve
