Crisp Romaine and Apple Salad with Peanut Butter Dressing
(approximately 4 servings)
2 large Fuji apples (any crisp apple will do - Honey Crisp, pink lady, Granny Smith, etc.)
Juice from 1 lime, divided use
¼ cup plain yogurt
2 T. smooth natural peanut butter (Smuckers)
1 T. water
¼ tsp salt
3 cups of Romaine hearts, chopped (substitute watercress, when you can find it)
Core the apples and cut into small pieces. The apples can be peeled, if you prefer but it's not necessary. Toss the cut apples with half of the lime juice and set aside.
Whisk together the yogurt, peanut butter, water, salt, and remaining lime juice.
Mix the apples with the Romaine hearts and toss with dressing. Enjoy!
