AFRICAN CARROT SOUP
1 onion
4 large carrots
2 tbsp olive or coconut oil
1 tsp curry
2 tbsp nutbutter of choice
sea salt to taste
½  tsp orange zest
3 cups veggie broth or water

Saute onions and carrots in oil for a few minutes.  Add broth/water and bring to boil.  Reduce to simmer and cover for 10 minutes.  Blend and return to pot (leaving chunks if desired), and stir in nutbutter, zest and curry.  Season to taste, serve.  Serves 2-4.
