Recipe: Parmesan Cod

Ingredients:
4 - Cod Fillet (defrosted if frozen)
1/2- Cup Parmesan Cheese
1/4- Cup Butter, softened
2- Tablespoons Mayo (Hellmans)
1 - Tablespoon fresh lemon juice
1/2- Tablespoon fresh dill weed
Salt and pepper to taste

Directions:
Turn broiler onto high and adjust oven rack to the top.

In a small bowl, combine all ingredients except the cod.   Set aside.  

Place cod filets on a foil lined pan.   Broil for 3-5 minutes.  

Remove from the oven, flip over, and divide the Parmesan mixture over the uncooked sides of the cod. 

Return to the oven and broil an additional 3-5 minutes making sure not to overcook the cod. 

Remove from the oven and serve immediately.
