Pan seared pork tenderloin with Port wine pear reduction
Yield - 4 servings
2 pork loins
3 tablespoons olive oil
Salt
Pepper
Garlic powder
1 cup port wine
1 pear cored and sliced
2 tablespoons honey
Pinch of salt and pepper
Pinch of crushed red pepper flakes
1) Preheat oven to 350 degrees
2) Trim the silver skin a fat off pork loins
3) Cut each in half
4) Heat 1 tablespoon oil in cast iron skillet till sizzling
5) Rub pork loins with salt, pepper, garlic powder, and remaining oil
6) Sear pork loins in skillet
7) Place in oven for 15 minutes for well done - less for medium
8) In a small suace pan bring 1 cup port wine to a rolling boil
9) Add pears, honey, and seasonings
10) Reduce to a syrup
11) Pour sauce over sliced pork loin
