Fruity Breakfast Quinoa

1/2C quinoa, rinsed
1C water
½ tsp cinnamon
¼ C vanilla almond milk
5 dried apricots, chopped
2 tsp raisins
1 TBS agave nectar

In a medium saucepan, add water and cinnamon and bring to a boil. Add quinoa and then turn down to a simmer.  Continue to cook until all the water is absorbed - about 12-15 minutes.  Stir in almond milk, apricots, raisins and agave.  Continue to cook for another minute or two.  Remove from heat and serve.
