Makes approximately 15 servings
1 stick of butter or margarine
1 package (about 40 cookies) chocolate sandwich cookies
½ gallon vanilla ice cream
1 tub of whipped cream
1 jar hot fudge sauce
1 jar caramel sauce (optional)
Place the chocolate sandwich cookies in a zippered plastic bag. Press out any air in the bag and seal. Crush the cookies with a rolling pin, creating cooking crumbs OR use a blender or food processor to crush. Melt the stick of butter or margarine.
Remove 3/4 of the cookies and place in a mixing bowl. Combine crumbs with melted butter or margarine and mix well. Press mixture into the bottom of a 9 x 13 inch pan. Drizzle crumb crust with ¾ cup of the chocolate sauce, warming the sauce in the microwave if necessary to make it easier to drizzle.
Freeze crust for about 15 minutes to firm up. Spread the vanilla ice cream evenly on top of the fudge mixture. It may help to let the ice cream set out for 15-20 minutes to let soften for easier spreading. Then spread the whipped cream evenly over the top of the ice cream.
Add the remaining chocolate sandwich cookies and drizzle with caramel sauce. Return to freezer to firm up and then slice and serve and enjoy!
