Pan sauted gnocchi with smoked bacon, arugula and white truffle oil

Recipe Courtesy Marc Del Pietro from Luciano's Trattoria

1 cup ricottia and Parmigiano gnocchi

2 Tbl smoked bacon (cut in small strips)

6 ea leaves of arugula

1 Tbl white truffle oil

4 oz chicken stock

1 tsp butter

TT salt & pepper

Method:

In a medium heat skillet saut the bacon until golden brown and remove all fat from the pan. Add the gnocchi and saut until they just start to brown. Add the chicken stock and reduce by half. Add the arugula just to wilt. Finish with the truffle oil and butter, adjust seasoning with salt and pepper. Serve at once
